THAI NOODLEs
Almond Curry

INGREDIENTS:

2 Cups Snow Peas (trimmed)
1 Package Rice Noodles (8oz)
1 tsp. Dark Sesame Oil
1/2 Cup Chopped Green Onions
1 1/2 tbsp. Minced Peeled Fresh Ginger
1 Cup Hot Water
2-3 tbsp. Artisana Organic Raw Coconut Butter
1/4 Cup Tomato Paste
1 1/2 tsp. Salt
1 Dash of Ground Red Pepper
1/4 Cup Minced Fresh Cilantro

 

PREPARATION:

Cook Snow Peas and Rice Noodles in boiling water approx. for 3 minutes. Drain well. Heat oil in a large nonstick medium skillet on medium heat. Add onions, ginger and garlic and sauté 2 minutes. Add Artisana Coconut Butter to hot water stirring until well blended. Slowly stir Artisana Coconut butter mixture, tomato paste, curry powder, salt and red pepper into skillet. Bring to a boil. Cover, reduce heat, and simmer for 5 minutes, stirring occasionaly. Combine snow peas, rice noodles, and green onion mixture in large bowl and sprinkle with cilantro.
