BLISS BITES

INGREDIENTS:

Your favorite pie crust recipe (must be a roll out, not pat-in-pan). A simple one is 2 cups flour, 7 oz. butter, a pinch of salt, and water to bring crust together or use a ready made crust.

PREPARATION:

Roll our your pie crust (if using a two crust recipe, roll one half at a time).
Cut rolled crust into 4″x4″ squares / rectangles / large circles and place a rounded table spoon of Amazon Bliss in the center. Fold up the edges of the pastry to enclose the Bliss – you can pinch it together at the top, fold the sides over one another, or loosely gather at the top for a “rustic” look. Bake on a cookie sheet in a 375o oven until the crust is golden brown. Cool on a cooling rack and serve warm or room temperature. These are rich, so a little will go a long way! COCONUT CURRY

INGREDIENTS:

1 large zucchini
1 large carrot
1 tbsp Artisana Coconut Oil
1 small onion, quartered
1 jalapeño pepper, seeded and minced
1/2 tbsp reduced-sodium soy sauce
1/2 inch slice fresh ginger
1 to 2 cloves garlic

2 tsp ground cumin
1/2 tsp ground coriander seed
1 cup hot water
2-3 tbsp Artisana Organic Raw Coconut butter
1 lime
1/4 cup chopped cilantro leaves
2/3 cup cooked instant brown rice

PREPARATION:

In a large pot of boiling water cook the pasta until al dente. Drain the pasta, but keep 3/4 cup of the cooking water. Heat 1/2 cup of the olive oil in large skillet on medium heat. Fry the sage leaves on medium heat until crisp. Drain the sage on paper towels then chop half of the leaves. Combine the chopped sage, garlic, Artisana Almond Butter, remaining 1/4 cup of oil, scallion, zest, red pepper and all but 2 tablespoons of the cheese. Toss the pasta with the pesto; add the pasta water as necessary to make a creamy sauce. Season with salt and pepper. Top with the remaining cheese and whole sage leaves and serve.

THAI NOODLEs

INGREDIENTS:

2 Cups Snow Peas (trimmed)
1 Package Rice Noodles (8oz)
1 tsp. Dark Sesame Oil
1/2 Cup Chopped Green Onions
1 1/2 tbsp. Minced Peeled Fresh Ginger
1 Cup Hot Water

2-3 tbsp. Artisana Organic Raw Coconut Butter
1/4 Cup Tomato Paste
1 1/2 tsp. Salt
1 Dash of Ground Red Pepper
1/4 Cup Minced Fresh Cilantro

PREPARATION:

Cook Snow Peas and Rice Noodles in boiling water approx. for 3 minutes. Drain well. Heat oil in a large nonstick medium skillet on medium heat. Add onions, ginger and garlic and sauté 2 minutes. Add Artisana Coconut Butter to hot water stirring until well blended. Slowly stir Artisana Coconut butter mixture, tomato paste, curry powder, salt and red pepper into skillet. Bring to a boil. Cover, reduce heat, and simmer for 5 minutes, stirring occasionaly. Combine snow peas, rice noodles, and green onion mixture in large bowl and sprinkle with cilantro.
